Zubereitung Künefe (Cheese-filled Shredded Pastry Hatay)

Preheat the oven to 180°C (350°F).

Break the shredded pastry (kataifi) into small pieces and spread it evenly in a large mixing bowl.

Melt the butter in a saucepan over low heat and pour it over the shredded pastry. Mix thoroughly until all the pastry is coated with butter.

Grease a round baking tray or pan with some butter.

Place half of the buttered shredded pastry into the baking tray, pressing it down firmly to create an even layer.

Distribute the finely shredded unsalted cheese evenly over the pastry layer. Traditionally, Hatay cheese or Mozzarella is used.

Cover the cheese layer with the remaining shredded pastry, pressing gently but firmly to create a compact layer.

Bake in the preheated oven for about 25-30 minutes, or until the top turns golden brown and crispy.

While the künefe is baking, prepare the sugar syrup by combining sugar and water in a saucepan. Bring to a boil, then simmer for 10 minutes until slightly thickened. Remove from heat and add lemon juice. Let cool.

Once the künefe is baked, remove it from the oven and immediately pour the cooled sugar syrup evenly over the hot pastry to soak.

Allow the künefe to rest for 5 minutes to absorb the syrup.
