Zubereitung Sarıyer Böreği (Istanbul Spiral Pastry)

Mix flour and salt in a large bowl. Gradually add lukewarm water and olive oil to form a smooth dough. Knead well for about 10 minutes until elastic. Cover the dough and let it rest for 30 minutes.

Divide the dough into equal small balls. Roll each ball out very thinly on a floured surface into a rectangular or circular sheet.

Brush each sheet generously with melted butter or olive oil. Sprinkle crumbled feta cheese evenly over the surface. Optionally, finely chop fresh parsley and sprinkle it along with the cheese.

Starting from one edge, roll the dough sheet into a long thin strip. Then coil the strip into a spiral shape, tucking the end underneath.

Place the spirals on a greased baking tray or parchment paper. Brush tops with more melted butter or olive oil. Optionally, sprinkle nigella seeds or sesame seeds on top.

Preheat the oven to 180°C (350°F). Bake the Sarıyer Böreği spirals for 30-35 minutes or until golden brown and crisp.
