Keşkül is a traditional Ottoman-era almond milk pudding characterized by its smooth texture made from ground rice and almonds, flavored with sugar and often garnished with nuts and cinnamon.

Soak the rice in water for about 30 minutes then drain.

Grind the soaked rice and almond to a fine powder using a blender or food processor.

In a saucepan, combine the ground rice and almond powder with sugar and 1 liter of almond milk, whisking to combine well.

Place the saucepan over medium heat and stir continuously until the mixture thickens, about 15-20 minutes.

Once thickened, remove from heat and pour the pudding into serving bowls or cups.

Allow the pudding to cool to room temperature, then refrigerate for at least 2 hours until set.

Before serving, garnish with slivered almond and optionally a sprinkle of ground pistachio or cinnamon.
