In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.

Add the minced meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Stir in the finely chopped parsley, salt, black pepper, and red pepper flakes, and cook for an additional 2-3 minutes. Remove from heat and let the filling cool.

Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil.

Place another sheet of phyllo dough on top and brush with olive oil again. Repeat this layering for 3-4 sheets.

Starting from one edge, carefully roll the dough into a tight log shape.
